Crispy on the outside, soft on the inside—these Broccoli & Corn Fritters are a perfect summer dish! Serve them as a snack, side, or even a light meal.

What you'll need:
- 1 small head of broccoli, finely chopped
- 350g sweetcorn (fresh, frozen, or canned)
- 170g plain flour
- ½ tsp baking powder
- 2 eggs
- 60ml milk
- 170g grated cheese (cheddar or parmesan)
- 2 spring onions, finely chopped
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & pepper to taste
- Olive oil for frying
Method:
1. Blanch the Broccoli – Bring a pot of water to a boil, add chopped broccoli, and cook for 2 minutes. Drain and rinse with cold water.
2. Mix the Batter – In a large bowl, whisk together flour, baking powder, eggs, and milk until smooth.
3. Add the Veggies – Stir in broccoli, sweetcorn, cheese, spring onions, garlic powder, paprika, salt, and pepper. Mix well.
4. Cook the Fritters – Heat a little olive oil in a pan over medium heat. Drop spoonful's of the mixture and flatten slightly. Cook for 2-3 minutes per side until golden brown and crispy.
5. Serve & Enjoy! – Serve warm with sour cream, yogurt dip, or a squeeze of lemon.
