What you'll need:

  • 1 x Boneless turkey crown. (Approx. 5kg)  
  • 200g softened butter  
  • Salt and pepper  

Method:

  1. Carefully separate the 2 turkey breasts with a knife.  
  2. With your hands rub both turkey breasts with a good amount of salt and pepper, then rub all over with the softened butter.
  3. Roll each breast in clingfilm and then wrap in a layer of tin foil. The cling film ensures the moisture stays in the joint. 
  4. Roast at 180°C for 1hr 10 min.  
  5. Once cooked, remove from oven and let it rest in the foil for at least 20 min before carving to serve.
