Try our Chicken Souvlaki Kebab—tender, marinated chicken skewers grilled to perfection. Infused with Mediterranean spices and served with fresh veggies and a tangy tzatziki sauce, these kebabs make for a flavourful and satisfying meal that's easy to enjoy anytime.

What you'll need:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon ground cumin
  • 1 sliced red onion
  • lettuce shredded
  • 2 large tomatoes, diced
  • 1/4 cup crumbled feta cheese (optional)
  • Tzatziki sauce
  • Pita bread or flatbreads
  • Fresh parsley or dill, chopped (optional)

Method:

Marinate the Chicken:

In a large bowl, combine olive oil, lemon juice, minced garlic, red wine vinegar, oregano, thyme, rosemary, cumin, salt, and pepper.

Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavour.

Prepare the Kebabs:

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.Thread the marinated chicken pieces onto the skewers, alternating with pieces of red onion and bell peppers.

Grill the Kebabs:

Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. The internal temperature of the chicken should reach 165°F (75°C).

Prepare the Pitas:

Warm the pita bread or flatbreads on the grill or in an oven. Spread a generous amount of tzatziki sauce inside each pita.

Assemble the Pitas:

Remove the chicken and vegetables from the skewers. Stuff each pita with grilled chicken, grilled vegetables, shredded lettuce, diced tomatoes and thinly sliced red onion. Sprinkle with crumbled feta cheese (if using).

Serve:

Serve the stuffed pitas with a sprinkle of chopped parsley or dill, if desired.
