Festive Christmas Gravy
No roast dinner is complete without gravy – especially not Christmas dinner! With a delightful blend of savoury flavours and a velvety texture, this gravy enhances your roast and sides, bringing warmth and comfort to your festive table. Simple to make and irresistibly delicious, it’s sure to become a cherished staple at your holiday gatherings!
What you'll need:
- 1 Finely Diced Onion
- ½ Bottle of Red Wine (Malbec is best)
- 1 stick celery diced
- 2 carrots, peeled and diced
- 1 onion, peeled and diced
- 4 Bay leaves
- 1 teaspoon black pepper corns
- 50g Fresh Thyme
- 1 litre Chicken Stock.
- 50g Butter
- 50 g Plain Flour
- Juice from roast turkey (optional)
Method:
- In a large pan caramelise the onion then add the red wine to deglaze the pan.
- Add the vegetables, stock, and herbs and simmer for 25-30 minutes.
- In a sperate jug, melt the butter and whisk in the flour to make a paste.
- Add this paste into the gravy to thicken it, whisking as you pour.
- When combined, transfer into a jug while passing through a fine sieve.
- Add the juices from the roast turkey and mix well. Your gravy is now ready to serve!
