Dinner sorted!
What you'll need:
- 4 Potatoes (Fresh or Frozen)
- 300g bacon , diced
- 150g grated cheese
- Salt and pepper
- Sour cream
- 1 scallion, finely sliced (green party only)
Method:
- Microwave potatoes until tender and heated through.
- Cut the potatoes in half, using a spoon to scoop out the potato, leaving a thin skin.
- Grill bacon until desired level of crisp. Crumble the cooked bacon.
- Mix the crumpled bacon with the potato filling
- Fill the potato skins with bacon and potato filling. Top with cheese.
- Bake for 10 minutes or until cheese is melted.
- Serve with sour cream, sprinkled with scallions.
