What you'll need:

  • 200g smoked streaky bacon 
  • 300g sausage meat 
  • 300g onion, peeled and diced 
  • 50g grated garlic 
  • 150gms butter 
  • 350g fresh breadcrumbs 
  • 50g dried apricots 
  • 20g fresh sage 
  • Juice of 1 lemon 
  • Salt and pepper 

Method:

  1. Weigh and lay out all your ingredients, dice the onion and grate the garlic  
  2. In a heavy pan, crispen bacon and cook the sausage meat, (typically takes 10-15 minutes on a medium heat)  
  3. Add the onions and garlic, then cook for a further 5 minutes. 
  4. Continue to stir throughout this whole process to avoid sticking.  
  5. Add the butter and melt through.  
  6. Then add the remaining ingredients (breadcrumbs, dried apricots, fresh sage, and juice of one lemon) and mix thoroughly. 
  7. Season to taste.  
  8. Once cooked, remove from the pan and roll in cling film to let it rest for 10 minutes before serving.
