The Ultimate Summer Side
Bursting with sweetness and flavour, these roasted vine tomatoes are the perfect summer side dish. Serve them alongside grilled meats, toss them into pasta, or enjoy them on crusty bread with a drizzle of olive oil!

What you'll need:
- 6-8 vine-ripened tomatoes (kept on the vine for extra flavour)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp balsamic vinegar
- 1 tsp honey (optional, for extra caramelization)
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp dried oregano
- A handful of fresh basil leaves
- Optional: crumbled feta for serving
Method:
- Preheat the Oven – Set your oven to 180°C (350°F).
- Prepare the Tomatoes – Place the vine tomatoes in a baking dish, keeping them attached to the vine for presentation.
- Season – Drizzle with olive oil and balsamic vinegar, then sprinkle with garlic, salt, pepper, oregano, and honey. Toss gently to coat.
- Roast – Bake for 20-25 minutes until the tomatoes are soft, blistered, and slightly caramelized.
- Finish with Basil – Remove from the oven and scatter fresh basil leaves over the top.
- Serve & Enjoy! – Serve warm as a side, on toasted sourdough, or tossed through pasta with parmesan.
