This sprout slaw is a vibrant and crunchy salad featuring Brussels sprouts, crisp vegetables, and a tangy dressing. Perfect as a refreshing side dish or light meal, this slaw adds a burst of flavor and nutrition to any table

What you'll need:

  • 130g red cabbage finely sliced
  • 100g Brussel sprouts finely sliced
  • 4 scallions, sliced (green & white parts)
  • 1 large carrot, grated
  • Good handful of dried cranberries
  • Mayonnaise (of your choice, light works as good as full)
  • 1/2 teaspoon English Mustard

Don't like or want mayonnaise? Try stirring through this dressing instead:

  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1-2 teaspoon mustard

Pop everything into a screw top jar, give a good shake to combine and then stir through in place of the mayonnaise.

Method:

  1. Place the cabbage, Brussel sprouts, scallions & carrot in a large bowl. 
  2. Adding the mayonnaise - this depends on how you like on your coleslaw. Start by adding one large tablespoon. Before folding it through the vegetables, add the mustard to the mayo and stir it through making sure it’s well distributed throughout. Keep adding the mayonnaise until you have the desired consistency. 
  3. Gently stir through the cranberries, reserving a few to sprinkle on top.
